Grilled Chicken and Quinoa Salad

This vibrant salad combines fluffy quinoa, perfectly grilled chicken, and a crisp medley of cherry tomatoes, cucumber, red onion, creamy avocado, and tangy feta. Finished with a zesty lemon dressing and a sprinkle of fresh parsley, it’s a wholesome, flavour-packed meal.

Equipment

  • Medium Saucepan with lid: For cooking the quinoa.
  • Grill Pan For grilling the chicken.
  • Hot pad To place the saucepan on while cooling.
  • Measuring cups/spoons For precise portions of chicken broth/quinoa, and other ingredients
  • Spatula or tongs To turn an remove the chicken from the grill pan.
  • Fork To fluff the cooked quinoa.
  • Cutting board and knife For slicing the grilled chicken from the grill pan.
  • Large mixing bowl To mix the salad.
  • Salad Bowl and Salad Servers To serve the salad.

Ingredients

Quinoa

  • 1 cup Quinoa rinsed
  • 1 cup Chicken broth

Chicken

  • 2 Chicken Breasts, skinless
  • 1 tbsp Olive oil
  • Salt and pepper to taste
  • 1 tsp Garlic powder

Salad Assembly

  • 1 cup Cherry tomatoes, halved
  • 1 Cucumber, diced
  • ¼ cup Red onion, diced
  • 1 med Avocado, diced
  • ¼ cup Feta Cheese, crumbled crumbled

Dressing and Garnish

  • 2 tbsp Lemon Juice freshly squeezed
  • 2 tbsp Fresh Parsley chopped (for serving)

Instructions

Tip

  • For added flavor, marinate the chicken in lemon juice and herbs for 30 minutes before grilling.

Cook the Quinoa

  • In a medium saucepan, bring the 1 cup Chicken broth to a boil.
  • Add the 1 cup Quinoa, reduce the heat, cover, and simmer for 15 minutes or until the liquid is absorbed.
  • Fluff with a fork and set aside to cool.

Prepare the Chicken

  • Season the 2 Chicken Breasts, skinless with 1 tsp Garlic powder, Salt and pepper to taste,
  • Heat 1 tbsp Olive oil in a grill pan over medium-high heat.
  • Grill the chicken for 6-7 minutes on each side, or until fully cooked.
  • Allow to rest before slicing into strips.

Assemble the Salad

  • In a large bowl, combine the cooled quinoa, 1 cup Cherry tomatoes, halved, 1 Cucumber, diced, 1/4 cup Red onion, diced, 1 med Avocado, diced and 1/4 cup Feta Cheese, crumbled.

Dress and Serve

  • Place the combined salad mixture into a large serving bowl.
  • Drizzle 2 tbsp Lemon Juice, add the grilled chicken on top, and sprinkle with 2 tbsp Fresh Parsley
  • Toss gently to combine and enjoy!
