Grilled Chicken and Quinoa Salad

Ingredients
Quinoa
- 1 cup Quinoa rinsed
- 1 cup Chicken broth
Chicken
- 2 Chicken Breasts, skinless
- 1 tbsp Olive oil
- Salt and pepper to taste
- 1 tsp Garlic powder
Salad Assembly
- 1 cup Cherry tomatoes, halved
- 1 Cucumber, diced
- ¼ cup Red onion, diced
- 1 med Avocado, diced
- ¼ cup Feta Cheese, crumbled crumbled
Dressing and Garnish
- 2 tbsp Lemon Juice freshly squeezed
- 2 tbsp Fresh Parsley chopped (for serving)
Instructions
Tip
- For added flavor, marinate the chicken in lemon juice and herbs for 30 minutes before grilling.
Cook the Quinoa
- In a medium saucepan, bring the 1 cup Chicken broth to a boil.
- Add the 1 cup Quinoa, reduce the heat, cover, and simmer for 15 minutes or until the liquid is absorbed.
- Fluff with a fork and set aside to cool.
Prepare the Chicken
- Season the 2 Chicken Breasts, skinless with 1 tsp Garlic powder, Salt and pepper to taste,
- Heat 1 tbsp Olive oil in a grill pan over medium-high heat.
- Grill the chicken for 6-7 minutes on each side, or until fully cooked.
- Allow to rest before slicing into strips.
Assemble the Salad
- In a large bowl, combine the cooled quinoa, 1 cup Cherry tomatoes, halved, 1 Cucumber, diced, 1/4 cup Red onion, diced, 1 med Avocado, diced and 1/4 cup Feta Cheese, crumbled.
Dress and Serve
- Place the combined salad mixture into a large serving bowl.
- Drizzle 2 tbsp Lemon Juice, add the grilled chicken on top, and sprinkle with 2 tbsp Fresh Parsley
- Toss gently to combine and enjoy!
